You will need…
- An onion
- A sweet red pepper
- 250g cooked baby potatoes
- 8 eggs
- Salt and pepper
- 2 tbs olive oil
- Chop the onion and pepper into small pieces.
- Chop the potatoes into chunks leaving the skin on.
- Crack the 8 eggs in a bowl and add the salt and pepper to taste.
- Mix with a hand whisk.
- Put the olive oil on pan and heat.
- Fry the onions and peppers for 5 minutes.
- Add the potatoes and fry for another 2 mins.
- Pour the egg mixture over the contents of the pan and cook for 5 minutes at a low heat.
- Now carefully put the pan under a hot grill for another 2 mins until the tortilla is golden.
- Cut the Spanish tortilla and share with some friends!!
- Delicious!
