Spanish Tortilla: March Cooking in Room 18. Healthy Choices!

You will need…

  • An onion
  • A sweet red pepper
  • 250g cooked baby potatoes
  • 8 eggs
  • Salt and pepper
  • 2 tbs olive oil
  1. Chop the onion and pepper into small pieces.
  2. Chop the potatoes into chunks leaving the skin on.
  3. Crack the 8 eggs in a bowl and add the salt and pepper to taste.
  4. Mix with a hand whisk.
  5. Put the olive oil on pan and heat.
  6. Fry the onions and peppers for 5 minutes.
  7. Add the potatoes and fry for another 2 mins.
  8. Pour the egg mixture over the contents of the pan and cook for 5 minutes at a low heat.
  9. Now carefully put the pan under a hot grill for another 2 mins until the tortilla is golden.
  10. Cut the Spanish tortilla and share with some friends!!
  11. Delicious!
